Abstract Cardiovascular diseases are a main cause of mortality in developed and developing countries. Accumulating evidence has demonstrated that saffron may be one of the best supplements for cardiac health due to its safety, beneficial antioxidant and antiinflammatory properties, and ability to decrease lipid levels. There are more than 150 chemicals in saffron. Among these, two carotenoids including crocin and crocetin are considered to be the most biologically active. Research indicates that saffron can reduce the risk of cardiovascular disorders such as arrhythmia, ischemic reperfusion, hypertrophy, hypertension, and atherosclerosis. Saffron also may attenuate the deleterious effects of natural and chemical toxins on the cardiovascular system. This chapter summarizes different studies regarding the effects of saffron and its active components on the cardiovascular system.
