Ascorbic acid (AA), commonly known as vitamin C, plays an important role in the human body, although its function at the cellular level is not yet clear. It is necessary for the synthe‐ sis of collagen, a protein that has many connective functions in the body. Among the sub‐ stances and structures that contain collagen are bone, cartilage and the surrounding material, as well as carrier substances and materials of union muscle, skin and other tissues. It also requires (AA) for the synthesis of hormones, neurotransmitters and in the metabolism of certain amino acids and vitamins. Participate in the liver for detoxification of toxic sub‐ stances and blood level for immunity. As an antioxidant reacts with histamine and peroxide for reducing inflammatory symptoms.
